It’s strange to call this a date night when it seems every day and every night is a special night—or as special as we deem to make them. But dinner and a concert is not an everyday occurrence, so I continue to instruct Michael on where to turn to reach the parking area attached to the Cypress Grille on Main Street in Boerne. We have been here before, but apparently, I remember restaurants and the food served more than he does. And to be fair, lunch at the Cypress Grille with girlfriends has happened more than once.
Cypress Grille Restaurant
For a date night dinner, we are early, arriving bare minutes after the Cypress Grille opens their doors at 5 p.m. Many tables are empty, but as a precaution I made reservations—I always do.
Sitting at the restaurant’s white-clothed table, the Cypress Grille menu open before me, I want nothing more than to have a leisurely four-course date night dinner. However, we have a bare hour before we must leave for the Spring Solstice Concert at Cave Without a Name. Tonight’s dinner is a case of needing to eat and run. But it is so lovely here—hurrying will be a hard thing to do.
Despite the upscale appetizer temptations on the menu of Seared Ahi Nachos, Peking Style Duck Lettuce Wraps, and Sonoma Foi Gras, as well as so many other tantalizing options, I settle for an entrée only. I feel like I could close my eyes and throw a dart, being happy with anything set before me. But instead, I choose blackened sea scallops while Michael opts for a premium Duroc pork chop with smoked gouda cheese and homemade applesauce.
Dinner at the Cypress Grill
The sea scallops are perfect. Sweet and tender with a lovely blackened crust. They are accompanied by a sweet potato hash, with andouille sausage, green beans, all of which sit atop a pool of whole grain mustard butter. The combination of flavors is perfect.
Michael tells me the stuffed baked potato served alongside his pork chop rivals the one I make. The applesauce is good and the sear on his chop is delicious, but the interior is a touch dry. I sympathize. Pork is such a hard thing to serve people—so many patrons panic when they see the slightest bit of pink in their pork, that many restaurants err on the side of slightly overcooking to keep their customers happy. It is almost a can’t win situation for them.
The Cypress Grille is so lovely; I lament the fact that we are not able to linger over another glass of wine, or coffee and dessert. Too soon our brief sixty minutes come to an end, and we say good-bye to the dinner portion of our date, making our way to the car, heading northeast—into the woods.

Concert at Cave Without a Name
We arrive at Cave Without a Name just in time to check-in and take our place in line for the one-hundred-and twenty-seven step descent into the cave. We have been here before, and are happy to be here again. Each Equinox, each Solstice celebration is the same yet different—all are joyous celebrations of the earth.
The Celebration Circle Solstice Concert
The music varies with the season, but there are always the haunting vibration of Tibetan bowls and the ancient drone of a Didgeridoo. This instrument, traditionally made from a termite hollowed eucalyptus tree branch or trunk, is centuries old—possibly as old as 1500 years—first made by Australian Aborigines living in the northern part of the continent.
The Solstice Concert Experience
There is light and total darkness, and breaking light—one candle at a time—and always the music of the human voice and the response of the cave. There is no clapping. It would ruin the mood. Silence from the listeners is the highest compliment for the performers. At the end of the concert, we climb from the ancient stone walls in the depths of the earth, to light and air—grass and sky— a rebirth.
We journey home on curving back roads through the Texas Hills—retaining the magic of the cave for a while longer. It is a perfect date night.
