To say that I love the elegant flavor of Grand Marnier in a dessert might be an extreme understatement. The first I tasted it was in a recipe for Pots de Creme and I fell in love with the orange-flavored, sweetened cognac.
When you need an impressive dessert for company, but do not have time to cook, this Grand Marnier mousse can be made in less than 10 minutes and may be prepared up to 24-hours in advance. And it is heaven on a spoon; the raspberries and mint being the refreshing foil for the richness of the creamy mousse.

Grand Marnier Sabayon Mousse with Fresh Raspberries and Mint
Serves 4
- 6 egg yolks
- 1/2 cup white superfine sugar
- 1/3 cup Grand Marnier
- 1/2 cup heavy cream, whipped
- Fresh raspberries
- Mint leaves, shredded or kept whole
Place the bottom half of a double boiler over medium heat and bring to a simmer.
Place the first three ingredients in the top half of a double boiler (with a curved bottom) or a heat-proof bowl and mix with an electric hand mixer at high speed.
Continue beating the mixture at high speed for 4 – 6 minutes, or until the mixture thickens. Remove from the top half of the double boiler and continue beating to cool down the mixture; it will look like a thick custard. When the mixture is cool, beat into the whipped cream, combining well.
NOTE: If you don’t have a handheld electric mixer, and if you have a good arm, you may use a wire whisk.
Divide the mixture among 4 small, wide-rimmed bowls or martini glasses and refrigerate until serving time. When ready to serve place a handful of fresh raspberries on top of the mousse and garnish with shredded or whole mint.
NOTE: The mint is not just for decoration, the combination of mint, raspberries, and mousse I a taste of heaven!
